Episode 16: Thanks to confocal microscopy, researchers from the French National Center for Scientific Research studied the freezing of emulsion. They observed the interaction between oil droplets and ice crystals, and noticed the formation of a liquid film around the droplets. This liquid contains surfactants that stabilise the emulsion. The study of this phenomenon could eventually help scientists improve the cryopreservation of cells and the production of alloys.
