Fruit de palmier ouvert. Le noyau, bordé d'une coque (endocarpe) noire, contient une amande blanche. De cette amande est extraite l'huile de palmiste, à utilité industrielle. L'huile de palme, à usage essentiellement alimentaire, est extraite du mésocarpe (pulpe orange). Elle contient des quantités importantes de carotènes (pro-vitamine A) qui lui donnent sa couleur.
